Ian Scaramuzza, head chef at Claude Bosi’s 2-Michelin-starred Hibiscus restaurant in London, has been crowned Roux Scholar 2015.

His prize is an opportunity to work in a 3 Michelin star restaurant of his choice anywhere in the world for three months, plus a set of Global Sai knives worth £1,000.

Launched by the Roux family of chefs 32 years ago, the Roux Scholarship is a competition for chefs under 30 who are working as chefs in the UK. Global Knives UK has sponsored the Roux Scholarship since it began and the relationship between the brand and the Roux family has continued to grow
